- 4 whole Eggs
- 3 cups Sifted Flour (All-Purpose Or Whole Wheat)
- 1- 1/2 Tablespoon Water
Directions

1In a stand mixer, combine eggs, flour and water.

2Mix with a paddle attachment for about 30 seconds.

3Switch to a dough hook, and continue on low for two minutes.

4Turn it out onto a slightly floured countertop and knead slowly for another minute.

5Cut into two large rounds and cover tightly with a tea towel or paper towel, so it is compltely covered on all sides.

6Let sit about 15 minutes before using it in your pasta maker.

7Follow the instructions on your pasta machine/pasta attachment.

8Dry pasta on the counter in a single layer, or using a pasta drying apparatus.

9Note: you can use wooden clothes hangers to dry pasta on.

10Just drape the strands of pasta over the wooden dowel.

11Hang to dry.

13Fresh pasta only needs to cook in boiling water for about 710 minutes, until tender.
