- 2 acorn squash (3/4 lb. each)
- 4 Tbsp. honey
- 4 tsp. butter
- 1/8 tsp. lemon peel (grated)

1Pierce skin of squash several times.

2Put on microwave tray, cook on High 4 to 5 minutes.

3Turn over after 2 minutes.

4Let stand 3 minutes, then cut in half.

5Scoop out seeds.

6Arrange in dish with cut side up.

7Top with honey, butter and lemon; cover with plastic wrap.

8Cook 4 to 5 minutes or until squash is tender. Let stand, covered, 2 minutes before serving.
