Honey Gingerbread Cake

- 1/4 c. butter
- 1 c. brown sugar
- 2 eggs
- 1 tsp. lemon rind
- 1 3/4 c. flour
- 1 tsp. nutmeg (commercial) or 1/2 tsp. fresh grated
- 2 tsp. baking powder
- pinch of salt
- 2 tsp. ground ginger
- 1/3 c. honey
- 1/3 c. molasses
- 3 Tbsp. boiling water
Directions

1Beat butter, eggs, sugar and lemon rind.

2Sift together flour, nutmeg, baking powder, salt and ginger.

3In separate bowl, combine honey, molasses and water.

4Add alternately to butter mixture with flour mixture.

5Bake in buttered dish, 350° for 40 minutes; don't overbake.

6Serve with whipped cream.
