  • 1 12 ounces butter
  • 3 -4 tablespoons honey
  • 4 bananas, sliced half lengthways
  • 1 -2 tablespoon rum
  • 1 -2 tablespoon pecans, chopped
  • ice cream, to serve

Directions

    Melt butter with honey in a heavy-based frying pan and cook until just beginning to brown.

    Place the bananas in the pan.

    Cook for 3-4 minutes, turning occasionally, until caramelized.

    Add a good splash of rum to the pan and allow to evaporate, then sprinkle with chopped pecans and serve with ice cream.
