  • 1-1/2 cup Flour
  • 1 teaspoon Baking Soda
  • 1 pinch Salt
  • 1 whole Egg
  • 1 cup Brown Sugar
  • 1 stick Unsalted Butter, Melted And Slightly Cooled
  • 1/2 cups Honey
  • 1/4 cups Greek Yogurt
  • 3/4 cups Oats, Divided

Directions

    Preheat the oven to 375°F and grease a loaf pan.

    In a small bowl, whisk together the flour, baking soda and salt, and set aside.

    In the bowl of your mixer, beat together the egg and brown sugar on medium-high speed until combined. Slowly drizzle in the melted butter, beating until combined. On low, add the honey and Greek yogurt until incorporated.

    Slowly add in the flour mixture, mixing on low until fully combined. Stir in 1/2 cup of oats. Pour the batter into the greased loaf pan, and sprinkle the remaining oats on top.

    Bake at 375°F for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before enjoying!
