- 4 large navel oranges
- 2 pink grapefruit
- 1 pineapple (ripe)
- 4 medium ripe bananas
- 2 Tbsp. lemon juice
- 1/2 tsp. dried thyme
- 1/4 c. honey
- 1/4 c. dark brown sugar
- sprigs of fresh mint (optional)
Directions

1Preheat oven to 350°.

2Cut and peel oranges and grapefruit. Cut into segments.

3Save juices.

4Set aside.

5Peel pineapple; cut crosswise into 1/2-inch thick slices.

6Core center and cut into 8 slices in quarters.

7Peel bananas.

8Halve crosswise, then lengthwise.

9Toss in bowl with lemon juice.

10Arrange in 9 x 13 x 2-inch baking dish.

11Arrange pineapple, overlapping the pieces slightly.

12Next, a row of orange segments, followed by grapefruit and oranges, then finish with bananas.

13Can be made ahead of time to this point and refrigerated.

14Sprinkle with thyme.

15Drizzle honey over top, then brown sugar.

16Bake 30 minutes, basting twice with any pan juices.
