Ingredients

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 clove garlic minced
  • 1/2 inch fresh ginger knob, peeled and grated
  • 1 pound fresh cod fillets 3-4 fillets per pound
  • nonstick cooking spray

Directions

  1. 1
Whisk together honey, soy sauce, garlic, and ginger in bowl. Place cod fillets in bowl and turn a few times to coat with marinade.
  2. 2
Cover bowl with plastic wrap and transfer to refrigerator for at least 30 minutes, and no longer than 8 hours.
  3. 3
    Preheat oven to 375°F.
  4. 4
Spray casserole dish with nonstick cooking spray.
  5. 5
Remove bowl from refrigerator. Transfer fillets to casserole dish and pour marinade over top.
  6. 6
Bake cod on middle rack of oven for 10-20 minutes, depending on thickness of fillets (about 10 minutes per inch of thickness), until crust is golden brown and fish is opaque in center and just starts to flake with a fork.
  7. 7
Check to see that cod is done. Remove from oven or add time as needed.
  8. 8
Plate cod and drizzle thickened marinade over top. Serve immediately.
