- 1 1/4 c. dry black-eyed peas
- 4 c. fresh water
- 1 1/2 c. chopped onion
- 1 clove garlic, minced
- 1 bay leaf
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. cayenne pepper
- 8 oz. tempeh
- 1 Tbsp. low sodium soy sauce
- salt to taste
Directions

1Soak the peas overnight in a large pot of water (or boil them for 2 minutes; cover and let stand 1 hour).

2Drain, then cover with 4 cups fresh water and bring to a boil. Add the onion, garlic, bay leaf, black pepper and cayenne.

3Bring to a boil; cover and simmer 1 hour, stirring occasionally.
