- 1 16 oz. pkg. black-eyed peas
- 6 cups water
- 8 oz. slab bacon (cut into cubes)
- 1 tsp. Tabasco sauce
- 1 tsp. salt
- 2 medium onions, chopped
- 1 cup raw rice
- 1 1/2 cups boiling water
Directions

1Wash peas and place in large pan with cold water.

2Bring to a boil and boil 2 minutes.

3Remove from heat, cover and let sit for 1 hour.

4Fry bacon slowly until brown, drain.

5Add Tabasco sauce, bacon and salt to peas.

6Bring to a boil, lower heat and simmer, stirring frequently for 30 minutes or until rice is tender. Should be moist, but not wet.

7Makes 6 servings.
