- 2 slices bacon, cut in half
- 1 c. chopped onions
- 2 garlic cloves, minced
- 2 c. water
- 1 (15 oz.) can black-eyed peas, drained
- 1/2 c. uncooked brown rice
- 1 bay leaf
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/4 tsp. hot pepper sauce
Directions

1Cook bacon in a large saucepan until crisp.

2Remove bacon; drain on paper towels.

3In bacon drippings, cook onions and garlic until soft.

4Add water, black-eyed peas, rice, bay leaf, salt, pepper and hot pepper sauce.

5Bring to a boil.

6Reduce heat, cover and simmer for 1 to 1/2 hours or until liquid is absorbed and rice is tender.

7Remove bay leaf.

8Crumble bacon into rice mixture; stir.

9Sprinkle with fresh snipped parsley, if desired.
