- 1 lb. black-eyed peas
- 8 slices thick bacon, diced
- 1 c. chopped onion
- 2 1/2 qt. water
- 1 minced clove garlic
- 1 tsp. hot pepper sauce
- 1/8 tsp. thyme
- 1/8 tsp. rosemary
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. uncooked rice
Directions

1Soak peas in water to cover for 6 to 8 hours or overnight. Place bacon in a large pot and fry over low flame until almost done.

2Add onion and cook until light brown. Add garlic seasoning and bring to a boil. Wash and drain peas.

3Add to boiling mixture. Simmer gently over low flame for 1 to 1 1/2 hours.

4Add rice and cook for 30 to 40 minutes more until peas and rice are tender and liquid has thickened.

5Makes 6 to 8 servings.
