- 1/2 c. chopped green peppers
- 1 Tbsp. chopped onion
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3/4 tsp. chili powder
- 1/4 tsp. cumin
- 1 1/4 c. milk
- 1 c. shredded Cheddar
- 1 (15 oz.) can black-eyed peas, drained
- 1 c. cooked brown rice
- 3/4 c. diced ham
- 2 beaten eggs
Directions

1Cook pepper and onions in butter until tender.

2Stir in next 3 ingredients.

3Stir in milk.

4Cook and stir until bubbly.

5Remove from heat.

6Stir in 3/4 of the cheese and the remaining ingredients.

7Turn into a well-greased 8 x 8 x 2-inch baking dish. Bake at 350° for 30 minutes or until set.

8Top with remaining cheese.

9Let stand for 5 minutes.

10Cut into squares.
