  • 1/2 c. chopped green peppers
  • 1 Tbsp. chopped onion
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 3/4 tsp. chili powder
  • 1/4 tsp. cumin
  • 1 1/4 c. milk
  • 1 c. shredded Cheddar
  • 1 (15 oz.) can black-eyed peas, drained
  • 1 c. cooked brown rice
  • 3/4 c. diced ham
  • 2 beaten eggs

    Cook pepper and onions in butter until tender.

    Stir in next 3 ingredients.

    Stir in milk.

    Cook and stir until bubbly.

    Remove from heat.

    Stir in 3/4 of the cheese and the remaining ingredients.

    Turn into a well-greased 8 x 8 x 2-inch baking dish. Bake at 350° for 30 minutes or until set.
