  • 2 cans (15 Oz. Can) Black-eyed Peas, Drained And Rinsed
  • 1 whole Onion, Diced
  • 1 whole Green Pepper, Diced
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Ham Or 1/2 Lb. Cooked & Crumbled Bacon
  • 1 teaspoon Seasoned Salt
  • 3 cups Leftover Cooked Rice
  • 1 can (16 Oz. Can) Chicken Broth

    Basic recipe:

    Saute the onion and green pepper in oil.

    (If using bacon, saute them in a tablespoon of the bacon grease.)

    Add the remaining ingredients and stir until combined.

    Bake in an uncovered casserole dish at 350 degrees for 45 minutes, until completely heated through.

    Stir again before serving.

    Variations:

    Substitute a pound of ham hocks for the ham or bacon; remove after baking and chop into bite-sized pieces before adding back into the casserole dish.
