- 2 pkg. frozen black-eyed peas
- 1 1/2 c. rice
- 4 slices bacon
- 1 medium onion, sliced
- 2 c. water
Directions

1Cook black-eyed peas according to directions on package. Drain.

2Meantime, fry bacon, crisp; remove from pan.

3Fry onions until golden in the fat.

4Add, with fat, to rice and water.

5Bring to the boil and cook until water is absorbed (about 15 minutes). When almost done, add drained peas and let them heat.

6Serves 6.
