  • 2 pkg. frozen black-eyed peas
  • 1 1/2 c. rice
  • 4 slices bacon
  • 1 medium onion, sliced
  • 2 c. water

Directions

    Cook black-eyed peas according to directions on package. Drain.

    Meantime, fry bacon, crisp; remove from pan.

    Fry onions until golden in the fat.

    Add, with fat, to rice and water.

    Bring to the boil and cook until water is absorbed (about 15 minutes). When almost done, add drained peas and let them heat.

    Serves 6.
