- 1/4 cup chopped celery
- 1 bay leaf
- 1 can (1 lb.) dry black-eye peas
- 1 cup water
- 1 cup Minute rice
Directions

1Fry bacon in saucepan until crisp.

2Add onion and celery; cook until onion is lightly browned.

3Add bay leaf and peas with liquid; cover and simmer 5 minutes.

4Stir in water and rice; bring to a boil, cover and simmer 5 minutes longer.

5Remove bay leaf before serving.
