- 1/2 lb. bacon
- 2 c. dried black-eyed peas
- 1 tsp. salt
- 1 c. rice
Directions

1Soak peas overnight.

2Cook bacon in 2 quarts of water until done.

3Add peas and salt.

4Cook 30 minutes or until peas are tender.

5Add rice and boil 15 to 18 minutes longer.

6Lift out bacon and set aside.

7Drain peas and rice thoroughly, then place in warm oven for a few minutes or until rice is fluffy.

8Serve with bacon on top.
