- 1 pt. cooked black-eyed peas
- 6 slices bacon
- 3/4 c. chopped onion
- 1 clove garlic, minced or 1 tsp. powder
- 1/2 c. cooked rice
- salt and pepper to taste
Directions

1Cook bacon, onion and garlic until bacon is crisp and onion is tender but not brown.

2Remove bacon and drain.

3Add peas and rice to onion, garlic and bacon drippings.

4Cover and reduce heat to simmer; cook 5 minutes.

5Add broken bacon bits and serve immediately with cornbread and pickle relish on the side.
