- 1 lb. dried blackeye peas, cooked
- 8 slices bacon, cooked crisp and crumbled
- 1 large onion and 2 ribs celery, chopped fine and browned in bacon grease
- 2 cans RoTel tomatoes, chopped
- 2/3 c. rice, cooked, with salt and pepper to taste
Directions

1Add chopped RoTel tomatoes with juice to the onion and celery.

2Add bacon and rice.

3Mix all with peas.

4Pour into 4 qt. casserole dish.

5Bake at 350 degrees for about 30 minutes.

6Makes 10 to 12 servings.
