- 2 cups dried black-eyed peas
- 3/4 pound ham, chopped
- 1 quart water
- 1 cup chopped onion
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon hot sauce
- 2 cups hot cooked rice
- 1/2 cup chopped green onions
Directions

1Bring peas and water to cover to a boil in a large saucepan; cook 2 minutes. Remove from heat; cover and let stand 1 hour. Drain.

2Bring ham and 1 quart water to a boil in saucepan; boil 15 minutes. Add peas; cover, reduce heat, and simmer, stirring occasionally, 45 minutes.

3Add onion and next 3 ingredients, and return to a boil. Cover, reduce heat, and simmer 15 minutes or until peas are tender. Stir in hot rice and green onions.
