- 2 (15 oz.) cans black-eyed peas
- 1 pkg. dried onion soup mix
- 1 c. rice (dry)
- 1/2 lb. hot sausage, cooked and drained
- 1 chicken bouillon
- water
Directions

1Drain peas, reserving liquid.

2Add enough water to pea liquid to make 2 cups.

3Combine peas, soup mix, liquid and sausage.

4Bring this mixture to a boil and reduce heat to low.

5Cover tightly and cook until rice is tender and liquid is absorbed, about 30 minutes. Add more water or liquid, if needed.
