- 1 16 oz pkg blackeyed peas
- 1 c. chopped onion
- 1 c. rice (uncooked)
- 1 lb. sausage (browned)
- 1/2 c. chopped green pepper
- 1/2 c. chopped red pepper
- salt & pepper to taste
Directions

1In large sauce pan cooke peas according to pkg.

2instructions until almost done; add remaining ingredients and simmer untile peas are tender, about 30 minutes.

3Add warm water untile there is enough pot liquor.

4Serve with cornbread and slaw.
