Hot Bean Compote(Serves 10)

Ingredients

  • 3 to 4 slices bacon (more if desired)
  • 1/2 c. sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 c. white vinegar (use less if cider)
  • 1 medium onion, sliced
  • 1 can cut green beans, drained
  • 1 can cut waxed beans, drained
  • 1 can kidney beans, drained

    Brown bacon until crisp.

    Cool grease.

    Mix sugar, cornstarch, salt and pepper; add to grease.

    Stir in vinegar.

    Stir over heat to thicken (bring to a boil).

    Add beans and onion.

    Bake at 350° for 20 minutes or put in a crock-pot to keep warm.

    Crumble bacon on top.
