Ingredients

  • 1 chicken, cooked and chopped into small pieces
  • 1 1/2 c. cooked rice
  • 1 1/4 c. diced celery
  • 3 Tbsp. chopped onion
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 hard-boiled eggs, chopped
  • 1/2 c. chicken broth
  • 1 can cream of chicken soup
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 c. potato chips, crushed or crushed cracker crumbs
  • 1/2 c. shredded Cheddar cheese
  • 3 Tbsp. margarine

Directions

    Gently combine all ingredients except for crushed chips, cheese and margarine.

    Combine these and sprinkle over casserole. Bake at 350° for 30 to 40 minutes.
