- diced red bell pepper
- 1/2 lb. diced smoked bacon
- 13 oz. minced clams
- 1 diced onion
- 1 bunch of scallions
- 2 diced garlic cloves
- 2 diced shallots
- 1 lemon, juiced
- 8 oz. Boursin cheese
- 8 oz. cream cheese
- 8 oz. Madeira wine
- Ritz cracker crumbs
- salt and pepper to taste
Directions

1Render bacon, add onions, red peppers, shallots and garlic. Cook until translucent, deglaze with Madeira wine. Remove from heat and let cool in a pan. In a separate bowl mix the Boursin, cream cheese, lemon juice, scallions and clams. Stir in the cooled pepper and bacon mixture. Pour into a baking dish and top with the Ritz cracker crumbs. Bake at 350 degrees until golden brown.
