Hot Corn Casserole

  • 1 medium onion, chopped fine
  • 1/4 stick margarine
  • 1 1/2 Tbsp. onion soup mix (dry)
  • 1/3 can Ro-Tel tomatoes
  • 2 cans white corn or Shoe Peg
  • 1 small can cream-style corn
  • pinch of sugar
  • 1/2 c. grated Cheddar cheese

Directions

    Saute onion in small amount of margarine.

    Add onion soup and Ro-Tel; stir well and add corn.

    Simmer about 5 minutes; add pinch of sugar.

    Then put in casserole dish and top with cheese. Cook for 20 to 25 minutes at 300°.

    Serves 6 to 8.
