  • 2 Tbsp. olive oil
  • 1 c. summer squash, chopped
  • 1 c. zucchini, chopped
  • 1 c. or 1 large onion
  • 3 cloves or more garlic
  • 2 c. chickpeas
  • 1 tsp. ground cumin
  • 1 tsp. curry powder
  • pepper
  • salt
  • 1 (12 oz.) box couscous (whole wheat or white)
  • chicken broth or bouillon
  • purple or red grapes

Directions

    Saute the vegetables and garlic in the oil for several minutes.

    Cook couscous in chicken broth in a separate pan.

    Add the chickpeas and the spices to the vegetables, and then add the cooked couscous.

    Cook until everything is hot completely through. Garnish with grapes.
