- 2 Tbsp. olive oil
- 1 c. summer squash, chopped
- 1 c. zucchini, chopped
- 1 c. or 1 large onion
- 3 cloves or more garlic
- 2 c. chickpeas
- 1 tsp. ground cumin
- 1 tsp. curry powder
- pepper
- salt
- 1 (12 oz.) box couscous (whole wheat or white)
- chicken broth or bouillon
- purple or red grapes
Directions

1Saute the vegetables and garlic in the oil for several minutes.

2Cook couscous in chicken broth in a separate pan.

3Add the chickpeas and the spices to the vegetables, and then add the cooked couscous.

4Cook until everything is hot completely through. Garnish with grapes.
