- 1 tablespoon Olive Oil
- 4 cloves Garlic
- 1 pinch Red Pepper Flakes (crushed)
- 4 Tomatoes
- 4 cups Spinach
- 1/2 cup Marinara
- 12 ounces Penne Pasta
- 1/3 cup Greek Yogurt (plain)
- 1/4 cup Parmesan cheese
Directions

1In large skillet with a lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes. Cook for 2 minutes or until garlic begins to soften.

2Dice tomatoes and then add them, salt and pepper to taste, cook for 5 minutes.

3Add in spinach and cover the skillet. Allow spinach to wilt for 2 minutes. Then remove the lid and stir in the marinara. Remove skillet from heat and let it rest for 5 minutes

4Stir in Greek yogurt and add in penne. Heat until just warmed through. Add parmesan for garnish.
