- 3 Tbsp. butter
- 1 large leek, chopped
- 3 pears, peeled, cored and quartered
- 1/2 c. white wine (dry)
- 3 c. chicken stock
- 2 tsp. tarragon or chervil (fresh)
- 1/2 c. heavy cream
- salt and pepper to taste
Directions

1Simmer leeks and butter, covered, for 15 minutes.

2Add pears and wine and bring to boil (until pears are cooked).

3Puree all together.

4Strain, if needed.

5Add remaining ingredients to puree. Simmer until heated through.
