Hot Potato Salad With Bacon

Ingredients
- 2 lb. boiling potatoes
- 6 slices bacon
- oil
- 1 scallion
- 3 Tbsp. red wine vinegar
- salt and pepper
Directions

1Cook potatoes until tender.

2Drain.

3When cool to touch, peel and cut into chunks.

4Cook bacon until crisp.

5Drain on paper towels and crumble.

6Measure bacon fat and add oil to make 1/2 cup and return to pan.

7Slice scallion and cook in fat until softened. Add vinegar, 1 teaspoon salt and 1/2 teaspoon pepper.

8Bring to boil and cook 1 minute.

9Immediately pour the entire contents of pan over potatoes and toss to coat.

10Add crumbled bacon.

11Add salt and pepper to taste.

12Serves 4 to 6.
