  • 2 c. cooked rice
  • 1/2 lb. grated cheese (Velveeta or American)
  • 16 oz. sour cream
  • 1 Tbsp. butter
  • 1 small can jalapeno peppers (remove stem and seeds; chop fine)

Directions

    Mix rice, butter and sour cream together.

    In a greased casserole dish, place a layer of rice, then a layer of peppers and a layer of cheese.

    Repeat, following steps.

    Bake at 350° for 20 to 25 minutes.
