Ingredients

  • 1 c. mashed potatoes
  • 3/4 c. sugar or less
  • 2/3 c. shortening
  • 2 eggs
  • 1 cake yeast
  • 1/2 c. potato water
  • 1 tsp. salt or more
  • 7 c. or less flour

Directions

    Mix potatoes, sugar and shortening.

    In another bowl, dissolve yeast in 1/2 cup water.

    Beat eggs and add to yeast mixture.

    Pour potato water into first ingredients.

    Add salt, then flour; knead and set in icebox to rise to double in size.

    Put dough on floured board; cut each roll from dough and work with fingers.

    Roll over in greased pan.

    Let rolls rise to twice their size and bake in moderate oven, 400°, until brown or about 30 minutes.
