Ingredients
- 2 Tbsp. oil
- 1 medium onion, chopped
- 2 tomatoes, chopped
- 2 Tbsp. canned jalapeno peppers, diced
- 1 (10 oz.) can frozen chopped spinach, thawed
- 2 c. grated Monterey Jack cheese
- 8 oz. cream cheese
- 1/2 c. half and half
- 2 to 2 1/2 oz. sliced olives
- 1 Tbsp. wine vinegar
Directions

1Saute onions and tomatoes in oil until soft.

2In a large bowl, mix tomato and onion mixture with the remaining ingredients.

3Pour into a baking dish and bake in a 400° oven until bubbly and browned.

4Serve with taco chips.
