Hot Spinach Dip

  • 2 Tbsp. oil
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 2 Tbsp. canned jalapeno peppers, diced
  • 1 (10 oz.) can frozen chopped spinach, thawed
  • 2 c. grated Monterey Jack cheese
  • 8 oz. cream cheese
  • 1/2 c. half and half
  • 2 to 2 1/2 oz. sliced olives
  • 1 Tbsp. wine vinegar

Directions

    Saute onions and tomatoes in oil until soft.

    In a large bowl, mix tomato and onion mixture with the remaining ingredients.

    Pour into a baking dish and bake in a 400° oven until bubbly and browned.

    Serve with taco chips.
