- 10 oz. pkg. fresh spinach, torn (9 c.)
- 4 slices bacon, diced (1/2 lb.)
- 1/4 c. light cream
- 2 beaten eggs
- 3 Tbsp. vinegar
- 2 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. paprika
- dash of pepper
- hard-cooked egg (wedges optional)
Directions

1Place spinach in salad bowl.

2In a 10-inch skillet, cook bacon over medium heat until crisp; spoon bacon and drippings over spinach.

3Combine light cream, eggs, vinegar, sugar, salt, paprika and pepper.

4Pour into skillet; cook and stir over medium heat until thickened.

5Pour over spinach; toss until leaves are well coated.

6Garnish with egg wedges, if desired.

7Serve at room temperature, warm.
