- 2 c. cornmeal
- 1 tsp. salt (optional)
- 1 c. boiling hot water
- 1/2 c. unbleached flour
- 3 tsp. baking powder
- 1 egg
- 2 Tbsp. oil or bacon drippings
Directions

1Combine cornmeal, salt and oil.

2Pour hot water and mix.

3Add flour and baking powder.

4Mix well.

5Blend in egg.

6Make 8 to 10 patties.

7Cook in hot oil in skillet or in the oven on greased cooking sheet until browned on both sides.

8Takes 10 to 15 minutes on top of stove and 20 to 25 minutes in the oven.
