- 2 tablespoons minced shallots
- 1 tablespoon chopped fresh thyme
- 1/2 cup brown sugar
- 1/4 cup sherry vinegar
- 2 tablespoons Port sea salt, to taste
- Freshly groud pepper, to tase
Directions

1Bring the first six ingerdients to a boil in a small saucepan. Stir untill the brown sugar dissolves. Turn heat down to a simmer and cook untill reduced by half, approximentely 25 min. Season with salt and pepper serve with meat or poltry
