- 1/2 c. butter
- 1 c. sugar
- 1 tsp. lemon juice
- 1/2 tsp. grated lemon rind
- 1 egg
- 2 1/4 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 c. milk
- 1 c. grated carrot
- 1 c. huckleberries
Directions

1Cream butter and sugar until light and fluffy.

2Add lemon juice, rind and egg and beat until well blended.

3Sift dry ingredients together and add to creamed mixture.

4Add milk.

5Stir in carrot and huckleberries.

6Drop by rounded teaspoonfuls on greased cookie sheet.

7Bake at 375° for 12 to 15 minutes or until done.

8Yields about 4 dozen.
