- graham cracker baked pie shell
- 1 qt. huckleberries
- 2/3 c. water
- 1 c. sugar
- 3 to 3 1/2 Tbsp. cornstarch
- 1/3 c. water
Directions

1Wash and drain huckleberries.

2Simmer together 1 cup huckleberries and 2/3 cup water for 3 minutes.

3Blend and add to boiling mixture the sugar, cornstarch and 1/3 cup water; boil for 1 minute, stirring constantly.

4Cool.

5Save out 1/2 cup of choice huckleberries.

6Put remaining 2 1/2 cups of huckleberries in pie shell.

7Cover with cooked mixture and garnish with 1/2 cup of remaining huckleberries.

8Refrigerate and serve with Cool Whip. Great with fresh huckleberries!
