  • 1 clove garlic
  • 1 slice onion
  • 3 jalepenos
  • 2 roma tomatos
  • 1 1/2 cup water or chicken stalk
  • 8 eggs
  • 4 epazote leaves

Directions

    boil jalepenos and tomato until tender.

    place in blender with garlic, onion, and water or chicken stalk and blend until smooth.

    in a large fry pan add a little oil to coat the pan and heat it.

    when fry pan is hot add the blended mix, stir in salt to taste and epazote, continue to stir occasionally until it boils.

    when mixture is boiling lower the temp to medium- medium high.

    Crack and add the eggs 1 at a time in the mixture and let simmer until the eggs are cooked to your liking.
