- 3 c. flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 3 eggs, beaten
- 1 tsp. cinnamon
- 1 c. oil
- 1 1/2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple (undrained)
- 1 c. chopped pecans
- 2 c. chopped bananas
Directions

1Combine flour, sugar, baking soda, salt and cinnamon in a large bowl.

2Add eggs and oil, stirring until dry ingredients are moistened.

3Do not beat.

4Stir in vanilla, pineapple, pecans and bananas.

5Spoon batter into 3 greased and floured round cake pans. Bake at 350° for 25 to 30 minutes or until pick comes clean.

6Cool in pan 10 minutes.

7Remove and cool completely.

8Spread with a cream cheese frosting between layers and on top and sides of cake. Sprinkle with pecans if desired.
