- 2 to 3 medium cloves garlic, sliced
- 1 large bunch parsley
- 2 fresh green onions, in 1-inch pieces
- 2 (15 1/2 oz.) cans rinsed and drained or 3 c. cooked chickpeas
- 6 Tbsp. tahini *
- 6 Tbsp. fresh lemon juice
- 3/4 to 1 tsp. salt or to taste
- cayenne to taste
- cumin to taste
Directions

1Place garlic, parsley and onions in a food processor or blender and mince.

2Add chickpeas, tahini, lemon juice and salt; puree to a thick paste.

3Season to taste.

4Transfer to a tightly lidded container and chill.

5Yields 3 1/2 cups.
