Ingredients

  • 2 to 3 medium cloves garlic, sliced
  • 1 large bunch parsley
  • 2 fresh green onions, in 1-inch pieces
  • 2 (15 1/2 oz.) cans rinsed and drained or 3 c. cooked chickpeas
  • 6 Tbsp. tahini *
  • 6 Tbsp. fresh lemon juice
  • 3/4 to 1 tsp. salt or to taste
  • cayenne to taste
  • cumin to taste

Directions

    Place garlic, parsley and onions in a food processor or blender and mince.

    Add chickpeas, tahini, lemon juice and salt; puree to a thick paste.

    Season to taste.

    Transfer to a tightly lidded container and chill.

    Yields 3 1/2 cups.
