- 1 (20 oz.) can chickpeas
- 1 to 2 cloves garlic
- 1 to 2 tsp. salt
- 1/3 c. fresh lemon juice
- 4 Tbsp. tahini (sesame seed paste)
- water or juice from chickpeas
- chopped parsley
Directions

1Drain and rinse chickpeas.

2Mash peas with a potato masher or ricer and set aside.

3Crush garlic and add teaspoon of salt. Combine with lemon juice.

4Stir into chickpeas.

5Beat in tahini. If mixture is too heavy, add some reserved juice from chickpeas. Can be made in food processor.

6Chill after garnishing with parsley.

7Serve with pita bread and raw vegetables.
