- fresh soft crabs
- 4 oz. butter or margarine
- egg wash (egg white mixed with 1 Tbsp. water)
- flour
- few drops lemon juice
- dash of seafood seasoning
Directions

1Place butter in a skillet and allow to get very hot, white in appearance.

2Dip soft crabs in egg wash, then dip in flour.

3Put crabs in hot butter and be careful of the splatters.

4Add seafood seasoning to taste, then lemon juice.

5Turn soft crabs when brown and crisp, about 5 minutes.

6Allow to cook 4 to 5 minutes on the other side.

7Remove from heat, take soft crabs from pan and pat dry with paper towels.

8Serve hot.

9This quantity butter is for 4 soft crabs, approximately 2 soft crabs to 1 ounce of butter.
