- For the hummus
- 110 g chickpeas
- 1 garlic clove
- 1 lemon, juice only
- salt & freshly ground black pepper
- 1 teaspoon ground coriander
- olive oil
- For the flatbread
- 255 g self-raising flour
- 1 tablespoon Greek yogurt
- 1 tablespoon olive oil (extra oil for frying)
- 1 pinch salt
- water
Directions

1Preheat a medium frying pan.

2Place the chickpeas, garlic, lemon juice and seasoning in the food processor and blitz until roughly chopped and combined.

3Gradually add the olive oil, a little at a time, until the hummus reaches a consistency of your liking.

4Spoon the hummus into a small serving bowl.

5To prepare the flatbreads, place the flour on a surface. Make a well in the centre of the flour.

6Place the yoghurt, oil and salt in the centre of the well.

7Add 1 tbsp water and then begin to work the flour into the liquids.

8Continue to add water, a little at a time, until you have a firm dough.

9Knead the dough and then shape into small, flat, discs.

10Heat an additional tbsp of oil in the frying pan, before adding the dough

11discs and frying them 2-3 minutes, either side.

12Remove the bread from the frying pan when it has browned and puffed up.

13Place the bread on a small plate and serve alongside the hummus.
