- 3 beef shanks
- 3 large celery stalks with leaves
- 2 large carrots
- 2 medium size potatoes
- 1 large onion
- 2 Tbsp. oil
- 2 Tbsp. paprika
- 1 (8 1/4 oz.) can tomatoes
- 2 tsp. salt
- 1/4 c. chopped parsley
Directions

1In Dutch oven (8-quart size), brown beef shanks in hot oil until browned on all sides.

2Remove meat and bones to plate.

3In remaining drippings, cook onion until tender.

4Stir in paprika. Cook 1 minute.

5Return beef and bones to Dutch oven.

6Add celery, carrots, tomatoes with their liquid, salt and 5 cups water to boiling.

7Reduce heat to simmer.

8Cover for 40 minutes.
