Hunter'S Squirrel Gumbo

Ingredients
- 2 squirrels
- 6 Tbsp. cooking oil
- 3 Tbsp. flour
- 3 c. water
- 1/2 c. chopped onions
- 1/2 c. chopped okra
- 1 tsp. salt
- 1 tsp. black pepper
Directions

1Clean and wash squirrels thoroughly.

2Cut into serving pieces and dredge well with mixture of flour, salt and black pepper. Brown well in heavy skillet with oil (iron skillet is excellent). Remove squirrels.

3Add flour to make roux.

4Add water; stir well (enough water for thin broth).

5Add onions, enough chopped celery to taste (approximately 1 stalk), okra, salt and pepper.

6Place squirrels back in skillet; bring to boil.

7Reduce heat to very low, cover and cook until meat falls off bone.

8File may be added before serving, but okra serves some purpose.

9Serve over hot rice.
