Ingredients
- 1 cut up broiler or fryer
- 1/2 c. cooking oil
- 1/2 lb. mushrooms
- 4 Tbsp. chopped onion
- 1 clove garlic
- 1 1/2 lb. tomatoes, peeled and chopped
- 2 Tbsp. tomato paste
- 1/2 c. dry white wine
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1 Tbsp. butter or margarine
- 1 Tbsp. minced parsley
Directions

1In large frypan, heat oil and brown chicken.

2Remove chicken; saute mushrooms, onion and garlic in oil.

3Put chicken back and add remaining ingredients except butter and parsley.

4Cook covered over low heat until tender, about 35 minutes.

5Arrange on platter. Add butter and parsley to sauce and pour over chicken.

6Serve over rice.
