Ingredients
- 6 large potatoes peeled or well scrubbed and quartered
- 4 large onions, peeled and sliced
- 8 large carrots, peeled and cut into chunks, (smaller than the potato pieces)
- 1 to 3 tablespoons butter (optional)
- 1/4 to 1 teaspoon salt (to taste)
- 1/4 to 1 teaspoon black pepper (to taste)
- 1/4 to 1 teaspoon thyme (to taste)
Directions

1Place the potatoes in a large saucepan and add water to cover.

2Layer the carrots and the onions on top.

3Bring to a boil.

4Then reduce the heat to a simmer.

5Cook for about 20 minutes or until the potatoes and carrots are fork tender.

6Drain, reserving some of the cooking liquid.

7Roughly mash the vegetables.

8Add butter if desired and salt, pepper and thyme.

9Add some of the cooking liquid, just enough to reach your desired consistency (I used 1/4 cup or so) and mash again.
