- 1 sponge cake, ready made
- 1 lb butter
- 2 cups icing sugar
- 4 eggs
- 250 ml heavy cream
- fresh fruit, of your choice or canned fruit
- cocoa powder (optional) or instant coffee powder (optional)
Directions

1Cut cake to fit a bowl.

2Blend butter & sugar, beat until creamed.

3Add eggs one by one.

4Add cream.

5Add coco powder or coffee powder at this point for choc OR coffee flavoured ice.

6Beat until thick & stiff.

7Put cake at bottom layer of bowl.

8Layer of icing.

9Layer of fruit.

10Layer of cake, layer of icing, layer of fruit etc.

11Finishing with top layer of cream.

12Decorate top with fruit.
-
13Refrigerate -- to be kept in fridge.
