Ice Cream Cake Roll

- 4 eggs
- 1/2 c. water
- 1 box yellow cake mix
- 1 1/2 qt. vanilla ice cream or yogurt
- 1 c. fruit (blueberries, raspberries or sliced strawberries)
Directions

1Grease 2 jelly roll pans.

2Line bottoms with waxed paper and grease and flour.

3Beat eggs until thick in large bowl.

4Mix in water; add cake mix.

5Pour batter into pans.

6Bake in 350° oven until cake begins to pull away from sides of pans, about 15 to 18 minutes.

7Invert on towels.

8Cool 8 to 10 minutes, no longer. Spread cakes with ice cream; sprinkle with your choice of berries, pressing lightly into the ice cream.

9Roll up and freeze.

10Slice and garnish with fresh berries.
