Ice Cream Cocoa Roll

- 4 eggs
- 1 tsp. vanilla
- 3/4 c. sugar
- 1/2 c. sifted flour
- 1/3 c. dry unsweetened cocoa
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 qt. ice cream (cherry or strawberry or your choice)
Directions

1Grease 15 x 10-inch jelly roll pan; line with wax paper; grease again.

2Beat eggs with vanilla until thick and lemon colored.

3Beat in sugar until mixture is thick and fluffy.

4Sift remaining ingredients over egg mixture and fold in carefully.

5Spread batter in pan.

6Bake at 400° for 10 minutes.

7Invert immediately on towel which has been dusted with powdered sugar.

8Remove wax paper and roll end to end, towel and all.

9Cool, unroll, remove from towel and spread with softened ice cream (your choice).

10Re-roll, wrap in foil or plastic wrap and freeze.
